Ingredients

  • For the marinade :

  • 1 tbsp Lemon Juice.

  • 1 tsp Red Chilli powder

  • 1 Green Chilli

  • 1 tbsp Oil

  • Black Salt to taste

  • For the kalmi wada :

  • 1 cup Channa (Bengal Gram), soaked

  • 1 cup chilke wala moong (Split Skinned Moong)

  • 1 cup Sungold Kiwifruit, peeled and diced

  • 1 tbsp Coriander Seeds

  • Black salt to taste

  • 1 ½ tsp Asafoetida

  • ½ tsp Cumin seeds

  • 3 Green Chillies

  • 1 tsp Ginger, chopped

  • Salt to taste

  • For the baked Kiwifruit:

  • 1 Sungold Kiwifruit, sliced

  • 1 sweet potato sliced

  • For the chaat topping :

  • 1 Sungold Kiwifruit, chopped

  • ¼ cup Kabuli Channa (chickeas), cooked and crushed

  • 2 tbsp pomegranate seeds

  • 1 green mango, finely diced

  • 1 Onion, chopped

  • 1 cup Potato wafers

  • 1 Green chilli, chopped

  • 1 cup whisked yoghurt

  • To serve:

  • Tamarind chutney

Steamed Kalmi Wada with Kiwifruit Chaat

DIRECTIONS

  1. To make marinade :
  2. Combine the lemon juice, black salt, red chilli powder, green chilli, oil & mix well.
  3. To make baked kiwifruit :
  4. Dredge the sweet potato & SunGold kiwifruit in the marinade and place them on baking tray.
  5. Bake till cooked. Keep marinade aside.
  6. For Kalmi Kiwifruit wade:
  7. Place the coriander seeds, black salt, asafoetida, cumin powder and salt, in a blender and crush.
  8. Add the green chilli, chopped ginger and pulse again.
  9. Add the channa and moong dals & grind to a coarse paste.
  10. Transfer mixture to a bowl.
  11. Using wet hands take small portions of the and shape into little tikkis.
  12. Gently press some of the chopped Golden kiwifruit into them and place in a steamer.
  13. Steam for about 15 minutes.
  14. For Kiwifruit chaat:
  15. Now in the remaining marinade, add the onion, crushed kabuli channa, pomegranate seeds, chopped green mango, potato chips, salt and green chilli and mix well.
  16. Keep aside till ready to serve.
  17. To serve:
  18. Place Kalmi wada in a bowl and top with chaat. Drizzle with tamarind chutney.
  19. Serve with salad & baked SubGold Kiwifruit on the side.
